Crispy Bean n' Cheese Burrito......Triangle Style
I have always loved bean and cheese burritos! But when I discovered how to make them crispy and crunchy.....Everything changed
They are 100x better crispy and homemade instead of from Del Taco.
They only require a few ingredients which makes it even better!
First get you need 2 tortillas.
And in a bowl you add about 1/4c. black beans for every burrito your making.
and about a tsp. of cumin if you want yummy flavoring
you then add about 1/4c. of shredded cheese, I like colby jack best for this recipe.
Then you add all together and mix well. You can add other seasonings like paprika if you would like more flavor or even onion powder. It depends on how you like it.
After your ingredients are mixed together you about 1.5Tblsp. of olive oil in a skillet and heat. (Make sure you move your pot around so it covers all of it)
Then you add the bean mixture the the middle of one tortilla.
And with the second one you cut a triangle out. And set the triangle piece over the middle of the beans in the first tortilla.
Then you fold in the corners making a triangle with the first tortilla with the second one covered.
Then you gently place it in the oil with the sides folded in facing down. You let it cook for 1-2mins and carefully watch to make sure it doesn't burn. Slowley flip it to the flat side to cook and then on all 3 sides to makesure they are cooked as well.
Take off heat with tongs and set on paper towel and then serve. They are good with hot sauce, bbq sauces, and guacamole.
Ingredients: per 1 burrito
- 2 tortillas of choice
- 1/4c. Black beans
- 1/4c. shredded cheese (colby jack prefered)
- 1 tsp. Cumin
- salt and pepper to taste
- 1-2 Tbsp. Olive oil for cooking
